Rainier Cherry Mojito

Serving Sizes:

Simple Syrup - 1 cup

Mojito - (1) 8 oz. glass

Rainier Cherry Simple Syrup

1 cup water

1 cup sugar

½ cup Rainier cherries (about 10)

Rainier Cherry Mojito

3 Rainier cherries, pitted

5-6 mint leaves

½ of a lime’s juice

1 shot white rum, chilled

1 oz. cherry simple syrup

4 oz. tonic water

Crushed ice, optional if liquid ingredients are chilled

To prepare cherry simple syrup:

  1. In a saucepan, add water, sugar and pitted cherries and simmer for 10 minutes on medium-high heat.

  2. Once syrup begins to thicken, remove from heat and mash cherries. Set aside until cool.

  3. Once cherries have cooled, pour mixture through strainer into a bowl, to separate the cherry bits from the syrup. Store syrup in a covered container in the refrigerator until ready to prepare drink.

To create cherry mojito:

  1. In a sturdy, thick- sided glass, add in cherries, lime juice and mint leaves.

  2. Muddle together until crushed to release the juices from the cherries and mint.

  3. Add in rum, cherry simple syrup and tonic water (add ice before liquid if necessary.)

  4. Lightly stir and enjoy!
