Low Carb Banana Pancakes

Serving Size: Six medium pancakes

 

Ingredients

2 ripe bananas

2 eggs

1 teaspoon brown sugar

⅛ teaspoon baking powder

⅛ teaspoon cinnamon

Butter or oil to coat pan

 

Instructions:

  1. In small bowl, use a fork to mash bananas until almost smooth. Set aside.

  2. In mixing bowl, add eggs, brown sugar, baking powder and cinnamon. Whisk ingredients together until combined.

  3. Add bananas into wet mixture and mix together until ingredients are combined and a batter is formed.

  4. On a heated griddle, melt a small pat of butter, coating the surface generously. Melt butter on medium - low heat.

  5. Once melted, use ladle to pour batter onto the griddle (one large ladle should create two medium sized pancakes.)

  6. Cook on medium- low heat for about 3-4 minutes or until batter begins to bubble and firm up. Flip pancakes and cook another 3 minutes.

  7. Serve immediately with your favorite syrup and enjoy!
