Smoked Salmon Fried Rice

Ingredients

Smoked Salmon or another cooked protein 

2 - 3 cups white rice, cooked

¼ cup red bell pepper, diced

¼ cup carrot, diced

½ cup green onion, sliced

2 teaspoon garlic, minced

1 ½ teaspoon ginger, minced

½ teaspoon crushed red pepper

Cilantro (optional for topping)

Sriracha (optional for topping)

Additional green onion (optional for topping)

Sauce Mixture (Makes ½ cup)

4 tablespoons low sodium soy sauce

1 tablespoon sesame oil

1  teaspoon fish sauce

½ of one lime’s  juice

Lemon zest

¼ teaspoon wasabi paste (optional for more spice)

Additional Items Needed:

Aluminum Foil or parchment paper

Baking Sheet

Instructions:

  1. Preheat the oven to 400℉

  2. Combine all of the ingredients for the sauce mixture, whisk together and set aside.

  3. In a large bowl, add in rice, red bell pepper, carrot, green onion, garlic, ginger and crushed red pepper and mix together.

  4. Pour in half of the sauce mixture into the bowl with the rice and mix until well combined. Add in more  of the sauce mixture and salt/pepper to taste.

  5. Line a baking sheet with foil or parchment paper, then spread the rice mixture evenly onto the baking sheet and cover with foil. 

  6. Bake for 10 minutes, then remove the foil cover and bake for an additional 10 minutes or until rice begins to crisp, slightly.

  7. Remove from the oven and mix in as much smoked salmon as you’d like (or other protein.)

  8. Top with cilantro leaves, green onion and sriracha. Serve hot and enjoy!
