Turkey Chili

Serves 8   | Prep 10 min   | Cook 20 min |   Ready in 30 min

Ingredients:

1- 1.5 lbs. pound turkey sausage, ground or removed from casing*

1 white onion, diced

1 green bell pepper, diced

1 tablespoon extra virgin olive oil, SKW infused EVOO preferred

2 cloves garlic, minced

½ teaspoon salt

¼ black pepper

1 teaspoon garlic powder

1 teaspoon chipotle chili pepper

1 teaspoon paprika

½ teaspoon cumin

3 cans (15.5 oz) chili beans

2 cans (15.5 oz) kidney beans, liquid drained

1 ½ cups water

1 cup broth (veggie, chicken or beef - your preference)

1 can ( 8 oz) tomato sauce

2 tablespoons tomato paste

1 can (15 oz) corn, drained

Cayenne pepper (optional to add heat)

Instructions:

  1. In a large pot, add in olive oil and begin to heat on medium- high heat. Add in turkey sausage, onion and green pepper and cook until sausage begins to brown.

  2. When sausage begins to brown, turn heat medium and add in garlic, salt, pepper, garlic powder, chipotle chili pepper, paprika and cumin; stir well until all ingredients are combined.

  3. Add in chili beans, drained kidney beans, water, broth, tomato sauce and tomato paste, stir well. Continue cooking on medium heat, stirring occasionally, about 10-15 minutes or until the liquid begins to thicken. Once thickened, add in drained corn, cayenne and stir. Continue cooking for a few more minutes stirring continuously.

  4. Serve hot and enjoy!

Note: To remove casing from turkey sausage links, use a knife to cut down the sausage lengthwise, pull back the casing and remove the sausage. In lieu of turkey sausage, use any other type of ground sausage or ground meat.
