Black Bean Burger Patties
Serving Size: 6 patties - ¾ inch thick
Ingredients
4 cans black beans, 15. 5 ounces
1 egg
1 yellow onion, finely diced
1 green pepper, finely diced
1 jalapeno pepper, finely diced (for more heat, add a second pepper)
1 ½ teaspoon garlic, minced
1 tablespoon soy sauce
½ tablespoon worcestershire sauce
1 tablespoon dijon mustard
¼ cup Italian breadcrumbs
½ teaspoon paprika
¼ teaspoon crushed red pepper (double for additional heat)
1 teaspoon sea salt
½ teaspoon freshly cracked black pepper
Cooking Instructions:
Preheat oven to 450° F
Open black beans and drain the liquid from the cans. Spread black beans evenly onto a parchment lined baking sheet.
Bake for 5 minutes until beans begin to dry out.
Remove the beans from the oven and place into a large mixing bowl.
Add in all other ingredients (sautee onion, peppers and garlic first, if you’re fancy) and mix together. Use a potato masher or a fork to mash beans and other contents in the bowl.
Note: No need to mash completely, chunks of beans are fine and will help with patty texture.
Form mixture into patties by hand or using a patty mold. This mixture will make 5 - 6 patties that are about ¾ of an inch thick.
Place patties onto a lined baking sheet, then bake for 20 minutes until patties are firm.
Add your favorite burger toppings, serve hot and enjoy!
Best way to store extra patties:
Place patties between parchment paper, place into a freezer bag and freeze. To reheat, place frozen patty onto a lined baking sheet and bake per instructions above.
