Chicken Ramen Noodles with Peanut Sauce

Serves 2- 3  | Prep 10 min   | Cook 10 min |   Ready in 20 min


Peanut Sauce Ingredients

¾ cup peanut butter, I like crunchy in this for texture

2 ½ tablespoons soy sauce, low sodium

1 teaspoon chili garlic sauce or sriracha

1 lime’s juice

2 garlic cloves, minced

1 teaspoon ginger, minced

3 tablespoons brown sugar

4 tablespoons water

1 dash sesame oil, optional

Chicken Ramen Noodles Ingredients

2 packages chicken ramen noodles

1 chicken breast, boneless skinless; small-medium dice

3 green onion stalks, hairy bottom cut off, white and light green parts sliced

½ red bell pepper, julienned or diced

1 tablespoon EVOO, SKW chili pepper-garlic infused EVOO preferred

½ teaspoon chicken seasoning from ramen packet

¼ teaspoon black pepper

2 tablespoons ramen water (save after cooking noodles)

Optional for garnish:

Green onions, green parts, sliced

Cilantro, finely chopped

Crushed red pepper

To prepare the peanut sauce:

  1. In a mixing bowl, add all ingredients, except water, and mix together. Once ingredients are mixed, add in two tablespoons of water and mix again. Add in additional water, one tablespoon at a time, until it reaches your desired consistency; Set aside.

To prepare the dish:

  1. Bring four cups of water to a boil, and drop in both packages of noodles. Cook for 1-2 minutes, just until noodles are softened. Remove noodles from the water and set aside. Make sure to save the water until you are completely finished making the dish, you will need it later. 

  2. Heat a pan on medium- high, and add one tablespoon of EVOO. Rotate the pan to move around the oil and coat the bottom. 

  3. Once coated, add in diced chicken, measured seasoning from ramen packet and black pepper. Mix together to ensure each piece of chicken is seasoned. Cook for about 5-6 minutes, stirring occasionally until chicken is browned.

  4. Add in peppers and onion and continue cooking for an additional 3 minutes until chicken is cooked through and peppers begin to soften.  

  5. Add noodles and water into the pan and mix well to combine all ingredients and to finish cooking the noodles. Once mixed and noodles are softened to your desired texture, turn off heat and add in peanut butter sauce. Add in salt, pepper or additional chicken flavor packet to taste.

  6. Finish with lime juice and top with green onion, cilantro and crushed red pepper, if desired. Mix all ingredients together, serve hot and enjoy!
