Veggie Spaghetti Zoodles

Ingredients

1 tablespoon extra virgin olive oil, SKW infused EVOO preferred

1 onion, diced

1 green pepper, diced

1 teaspoon garlic, minced

1 small jar tomato sauce

1 cup veggie meatless crumbles

Zucchini noodles

Italian Seasoning

Salt

Pepper

Parmesan cheese, optional


Instructions:

  1. Heat EVOO in a skillet and coat the bottom of the pan. 

  2. Add in onion, green pepper, garlic and meatless crumbles and cook on medium- high heat, stirring occasionally for about 5 minutes until onions and peppers begin to soften. 

  3. Pour in tomato sauce and stir well. Reduce heat to medium and let simmer for 10 minutes until sauce is hot and begins to bubble.

  4.  In a separate pan, add in olive oil, zucchini noodles, salt and pepper. Saute zucchini noodles on medium high until they begin to soften, about 5 minutes. 

  5. For serving, place zoodles into bowl and cover with tomato sauce. Top with parmesan cheese, serve hot and enjoy!
