BBQ Chicken Quesadillas

This recipe was created in partnership with SWEEETHEAT. SWEEETHEAT is a minority owned business based out Philadelphia.  SWEEETHEAT is owned and operated by Demond Mullen, owner of Streetside BBQ, a Philadelphia based bbq catering company.

Spicy Homey Honey was the first sauce Demond developed and has a special place in his heart. Spicy Homey Honey is also the first of their sauces that I have tried and it was great! It’s sweet, savory and tangy all at the same time. The spice level was very subtle and more on the mild side so don’t let the heat deter you from trying this awesome sauce (lol.)

Serving Size:

4 Quesadillas

Ingredients

4 flour tortillas

3 Thinly sliced chicken breast, diced

½ cup Sweeet Heat Spicy Homey Honey BBQ Sauce

1 red onion, chopped

⅓ cup pineapple, diced

Bacon, cooked and chopped

Colby Jack cheese, shredded

1 jalapeno, diced

1 tablespoon, extra virgin olive oil

½ teaspoon paprika

2 teaspoons sea salt

1 teaspoon pepper


BBQ chicken prep:

  1. In a heated pan, add in extra virgin olive oil and coat the bottom.

  2. Toss in red onion and cook on medium- low heat for about one minute.

  3. In the same pan, add in diced chicken and season with salt, pepper and paprika.

  4. Mix together all contents in the pan and continue cooking on medium- low heat, stirring continuously, for about 10 minutes or until chicken is fully cooked.

  5. Add in BBQ sauce and pineapple and continue to cook until sauce is warm.

  6. Remove from heat and set aside until ready to build quesadillas.

Building Quesadillas:

  1. Place tortilla in a non- stick skillet on medium heat.

  2. Add a generous amount of cheese onto tortilla, then spoon in BBQ chicken mix.

  3. Top BBQ chicken mix with jalapenos and extra pineapples (optional.)

  4. When the cheese melts, fold over tortilla and continue cooking until both sides are lightly browned.

  5. Slice, serve hot and enjoy!
